There is no menu card, no formal service, no clear beginning and end. Food arrives the way it should with Lebanese cooking, in waves, in abundance, meant to be shared. Arak, wine, cold beer. The kind of table where you arrive not knowing your neighbour and leave knowing too much about them.

Fahd cooks the cuts nobody orders and the recipes that never had a name. The food his family made. The food worth remembering.

Fahd is from Baalbek, an ancient city, Roman temples, and a kitchen culture that doesn't need a label.

He didn't grow up eating “Lebanese cuisine.” He grew up eating what his parents cooked after long days of work: borrowed recipes, instinctive combinations, a handful of cumin into whatever was in the oven. His grandmother filled the gaps, until she didn't. She died when Fahd was thirteen, and he walked into the kitchen to keep something of her alive.

That's where it started.

Today Athens knows him as the Guerilla Chef — the man behind the burger that the city didn't know it needed. On June 14th, he leaves the bun behind. One long table, a rooftop in Petralona, and the cuts and recipes that don't usually make the menu. An experience closer to a memory.
